We love these baked peaches and cream oatmeal cups! They taste as good as the instant oatmeal I loved as a kid. Make these ahead of time meal prep – they are wonderful for breakfast or a snack!

These peaches and cream oatmeal cups are a delish, portable way to enjoy some fresh peach flavor in a satisfying bite all at the same time. You can make these for breakfast or a snack and they are wonderful warm or cold.
I am living for peach season! Usually I get one one or two good peaches a year, with the rest being mealy and either too hard or ripe. But this year we’ve got so many good ones, and on top of that I got a peach truck order and found myself with approximately ten million peaches.
Okay, maybe it was more like thirty peaches, but still. I needed to do all the things with peaches. Sweet, savory, you name it.
Including making one of my most favorite comfort foods of childhood: peaches and cream oatmeal. I already have a peaches and cream oatmeal recipe right here, but these cups are where it’s at. They are make-ahead friendly, perfect for meal prepping and great when you need something to grab-and-grow.
It’s nothing new – I have rambled for years about how instant peaches and cream oatmeal was my thing as a kid. I loved it – I had it for breakfast and on the off chance that I didn’t, I may have eaten it for dinner or a snack. There was something so comforting about it to me, something so artificially peachy and delicious. And the best part was that my brothers had zero interest in it, so a box of it would last a long time at our house.
Even in college I would buy a box occasionally from the little shop in my dorm, just to get that cozy comforting feeling back sometimes.
I decided that I had to make a version of peaches and cream oatmeal cups, because we all love my almond butter oatmeal cups so much. They are chewy, satisfying, taste amazing and you can make a bunch of them at one time. Which is always a win.
P.S. these are my favorite muffin tins and the best to use for this recipe.
There was a moment where I almost incorporated cream cheese into these – really going for the whole “cream” element from peaches and cream. But I decided against it. That wasn’t a flavor at the forefront in those oatmeal packets I loved so much. So I used a combo of milk and cream instead and it’s so good.
My almond butter cups also use bananas, but I didn’t want to do that here – obviously. We’re talking peach! Not banana. So I used applesauce to maintain the moisture and a little sweetness in the cups. It’s great and doesn’t add any apple flavor whatsoever.
I love these so much. They are a great summer version of my oatmeal cups with the perfect punch of peach! (more…)
