This golden crostini is topped with an herby garlic-studded goat cheese spread and blanketed with a slice of smoked salmon.
It’s satisfying, tastes amazing and such a lovely little appetizer or brunch snack.
This recipe gives me all the spring feels! I want to eat it for breakfast and lunch. Serve it as a dinner app. I can’t get enough. I’ve been making a version on a regular slice of toast, that’s how much I love it.
Smoked salmon is one of my favorite things ever and for some crazy reason, I always save it for special occasions. Mostly around the holiday season and again at Easter. But there is no reason for that!
It’s such a wonderful staple for breakfast and brunch. Heck, even dinner. It’s so versatile and most of all, I love how incredibly satisfying it is.
Waaay back in the day when I was working on my first cookbook (over ten(!) years ago!!), I had a recipe for smoked salmon crostini in there. I ended up scrapping it because it seemed a bit too simple for the book. But it’s something I’ve been making one way or another ever since.
And I have to say, this is probably my favorite iteration. The flavors are spot on.
It all starts with the baguette. I take a baguette and slice it, then drizzle with olive oil and sprinkle with salt and garlic powder. A little makeshift garlic bread, if you will! Once that gets all toasty and golden in the oven, we have the most important part… the green goddess goat cheese.

I took my green goddess dressing and made it into a goat cheese spread. You can make it ahead of time and store it in the fridge to use for a few days. You will want to spread it on all the things. It’s a delicious garlicky green spread and makes everything taste better.
If you have a copy of Everyday Dinners, then you know what a huge proponent I am of things like sauces, dressings and spreads that can elevate a meal and make leftovers “special.” This green goddess goat cheese is now one of those things. It has become a fridge staple here. And it can be used like regular cream cheese, as a dip, a spread on sandwiches – all the things. It adds so much to any dish.
Finally, the crostini is topped with a perfect slice of smoked salmon. I like to finish things off with a sprinkle of fresh herbs (chive, parsley, dill, etc) and some of my quick pickled onions. Which are another thing I always have in the fridge!
This is a combination I will forever love. Sure, I’m a sucker for anything on toast. But this is one you don’t want to pass up! (more…)
